A shortbread and gin recipe from Bake Off’s Ruby

Gin Spiced Shortbread

Ingredients Instructions
  • 180g unsalted butter
  • 88g golden caster sugar
  • 180g plain flour
  • 100g cornflour
  • 1.5 tspb vanilla bean paste
  • 6 tspb Old Curiosity Distillery Christmas gin
  • Cream the butter, sugar, vanilla and gin together until light and pale
  • Sift in the flour and cornflour and mix until just combined
  • Carefully roll out the dough to approx. 0.5cm and chill in the fridge for 30 mins.
  • Cook in oven at 180C for 15 mins and cool
