Perthshire-born Andy said: ‘I’ve been at Inverlochy since January 2016. Before that I was senior sous chef at Cromlix when it opened.

‘I always wanted to cook. The day after I left school I had a job at Clive Ramsey’s in Bridge of Allan. It was a busy café. Then I worked with Andrew Fairlie at Gleneagles. I had some time down in Notiingham and then back to Scotland to Barley Bree before Cromlix.

‘I didn’t go to college, but I’ve always worked in kitchens. There wasn’t really anyone in my family who inspired me to cook. I think it was probably Jamie Oliver to be honest. I saw him on TV sliding down a bannister and thought ‘I could do that’. But the first person to really influence me was Andrew Fairlie. He changed my whole cooking style and the way that I think about food.

‘Before I worked with him it was just a job for me but now I’m so much more passionate about it. He made me realise that it’s so much more than just a job. I had an amazing time working there. That’s where food started to 100% consume my life. I made the decision to devote my life to it.’
