Scots chef Nico Simeone is to launch his own online TV mini series.
In the fiercely competitive world of Glasgow dining, restaurants are always trotting out a new trick to separate themselves from the pack, and each month at 111 by Nico in Glasgow’s West End, Chef Nico Simeone is doing exactly that.
TRUST is the new dining experience at the award- winning restaurant that asks guests to leave the decision of what to eat to the team of chefs.
This month the restaurant have invited some well known Glasgow faces to preview the menu with a Blind Tasting experience. Guests including food blogger Emma Mykytyn, former River City actress Holly Jack and fitness model Ross MacKay, who were kept unaware of the food identity as Nico launched a new online TV series that will see famous faces join him every month and tackle the food challenge.
The TRUST five course tasting menu is an immersive experience where the guest will choose from a list of 12 ingredients to make up their five course tasting menu. TRUST will be placed in the hands of our talented team of chefs who will create dishes around the guests chosen ingredients.
Never the same dinner twice, the TRUST menu begins with an amuse bouche highlighting local ingredients, then guests this August enjoy individual courses such as globe artichoke, lamb, pigeon and sea trout – the options are endless.
The five course tasting menu ends on a sweet note with a decadent dessert that include ingredients of popcorn and raspberries.
TRUST is priced at £25 per person and the 12 ingredients listed on each menu card will change on the first of every month.
111 by Nico have also designed drinks that will enhance and compliment the TRUST menu. They have sourced fine wines from around the world to local craft breweries to independent whisky and gin distilleries. The matching drinks pairing costs £22. TRUST is now available at the restaurant.

The August menu card is:
Amuse Bouche – green tomato or Caesar salad; Course 2 – Loch Etive sea trout, lamb sweetbread, pink fur apple potatoes; Course 3 – Globe Artichoke, Loch Ryan oyster, wood pigeon; Course 4 – grey sole, Jacob’s Ladder, fregola pasta; Course 5 – Bruce’s raspberries, popcorn, saffron.
Born in Glasgow, to Italian parents, Nico was raised in a family of Mediterranean foodies. His earliest memories are of his mother’s Italian cooking, helping her in the kitchen and large family meals around the table.
His colourful career has included stints at Michelin starred Number One at Balmoral, where he worked with Craig Sandle and was awarded Young Scottish Seafood Chef of the Year award, aged just 20.
Nico is the mastermind behind the innovative restaurant brand, Six By Nico. The restaurant brand creates a new menu every six weeks and has gone through a number of themes since opening their first restaurant site in Glasgow’s Finnieston area last year, ranging from Childhood to New York and Disney, and opened in Edinburgh on Hanover Street with The Chippie theme menu in March 2018.
