Use up those leftovers in this bubble and squeak recipe

Our trio of festive vegan recipes comes to an end today – and it’s a dish that you can’t help but enjoy.

Today, we present our third vegan-friendly recipe from Gregor Law, this time for Vegan Bubble and Squeak Savoury Christmas Pudding.

Gregor said: ‘There is no better time than Christmas to have some fun with your leftovers and come up with some inventive recipes. My bubble and squeak recipe works equally well as a fun side dish or even as a little restorative breakfast.’

He added: ‘I hope you enjoy my recipes for this festive season. Each recipe includes Scottish cold pressed rapeseed oil, sourced from producers across the country.

‘It has a beautifully distinctive golden-yellow hue and delivers a wonderful buttery and nutty flavour that complements good food, hot or cold. Low in saturates and particularly high in vitamin E it’s very hard to argue against. It also makes the perfect vegan alternative to the traditional fats used during the festive period.’
